Ingredients

  • Fresh green peas - 200 grams

  • Red onion - 50 grams, finely diced
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 100 grams, diced
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a pot of boiling water, blanch the fresh green peas for 2-3 minutes until tender. Drain and immediately transfer to an ice bath to stop the cooking process.
  2. Once the peas are cooled, drain them again and place them in a mixing bowl.
  3. Add the chopped mint leaves, diced red onion, halved cherry tomatoes, and diced cucumber to the bowl with the peas.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to create the dressing.
  5. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
