- Green peas - 200 grams (fresh or frozen)
- Fresh mint leaves - 30 grams
- Chickpea flour - 50 grams
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Olive oil - 2 tablespoons (plus more for cooking)
- Salt - ½ teaspoon
- Black pepper - ¼ teaspoon
- Pita bread - 2 pieces
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 2 tablespoons
Steps
- In a food processor, combine the green peas, fresh mint leaves, chickpea flour, minced garlic, chopped onion, cumin powder, coriander powder, salt, and black pepper. Blend until you achieve a coarse mixture.
- Transfer the mixture to a bowl and add 2 tablespoons of olive oil. Mix well and let it sit for 10 minutes.
- Form the mixture into 2 equal-sized patties.
- Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 5 minutes on each side, or until golden brown and cooked through.
- While the patties are cooking, prepare the tahini sauce by whisking together tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth.
- To assemble, place each patty inside a pita bread, drizzle with the tahini sauce, and add fresh mint leaves or any desired toppings.
