Ingredients

  • Green peas - 200 grams (fresh or frozen)
  • Fresh mint leaves - 30 grams
  • Chickpea flour - 50 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Olive oil - 2 tablespoons (plus more for cooking)
  • Salt - ½ teaspoon
  • Black pepper - ¼ teaspoon
  • Pita bread - 2 pieces
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 2 tablespoons

Steps

  1. In a food processor, combine the green peas, fresh mint leaves, chickpea flour, minced garlic, chopped onion, cumin powder, coriander powder, salt, and black pepper. Blend until you achieve a coarse mixture.
  2. Transfer the mixture to a bowl and add 2 tablespoons of olive oil. Mix well and let it sit for 10 minutes.
  3. Form the mixture into 2 equal-sized patties.
  4. Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 5 minutes on each side, or until golden brown and cooked through.
  5. While the patties are cooking, prepare the tahini sauce by whisking together tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth.
  6. To assemble, place each patty inside a pita bread, drizzle with the tahini sauce, and add fresh mint leaves or any desired toppings.
