Ingredients

  • all-purpose flour - 250 grams
  • water - 120 ml
  • olive oil - 30 ml
  • instant yeast - 5 grams
  • salt - 5 grams
  • ground beef - 200 grams
  • onion - 1 medium, finely chopped
  • garlic - 2 cloves, minced
  • ground cumin - 1 teaspoon
  • ground cinnamon - 1/2 teaspoon
  • fresh parsley - 2 tablespoons, chopped
  • black pepper - 1/2 teaspoon
  • pine nuts - 30 grams, toasted (optional)
  • egg - 1, beaten (for brushing)

Steps

  1. In a bowl, combine the flour, yeast, salt, olive oil, and water. Mix until a dough forms.
  2. Knead the dough on a floured surface for about 10 minutes until smooth. Cover and let it rise in a warm place for 30 minutes.
  3. While the dough is rising, heat a skillet over medium heat. Add the chopped onion and garlic, sauté until translucent.
  4. Add the ground beef to the skillet, breaking it apart. Cook until browned, then stir in cumin, cinnamon, black pepper, and parsley. Cook for another 2-3 minutes. If using, add toasted pine nuts, then remove from heat and let cool.
  5. Preheat the oven to 200°C (400°F).
  6. Once the dough has risen, divide it into 6 equal pieces. Roll each piece into a circle about 10 cm in diameter.
  7. Place a spoonful of the meat mixture in the center of each circle, then fold the edges over to form a triangle, pinching to seal.
  8. Place the fatayer on a baking sheet lined with parchment paper. Brush the tops with beaten egg.
  9. Bake in the preheated oven for 15-20 minutes or until golden brown.
  10. Serve warm or at room temperature.
