- Quail - 2 whole (about 300g each)
- Olive oil - 4 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 4 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Sumac - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a mixing bowl, combine the olive oil, lemon juice, minced garlic, cumin, paprika, sumac, salt, and black pepper to create the marinade.
- Rinse the quails under cold water and pat them dry with paper towels.
- Make shallow cuts on the quails to help the marinade penetrate, then place them in a large resealable bag or a shallow dish.
- Pour the marinade over the quails, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.
- Preheat the grill to medium-high heat.
- Remove the quails from the marinade and let any excess marinade drip off. Discard the used marinade.
- Place the quails on the grill and cook for about 15-20 minutes, turning occasionally, until the meat is cooked through and has nice grill marks.
- Once cooked, remove from the grill and let rest for 5 minutes before serving.
- Garnish with fresh parsley before serving.
