Ingredients

  • Quail - 2 whole (about 300g each)
  • Olive oil - 4 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Sumac - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a mixing bowl, combine the olive oil, lemon juice, minced garlic, cumin, paprika, sumac, salt, and black pepper to create the marinade.
  2. Rinse the quails under cold water and pat them dry with paper towels.
  3. Make shallow cuts on the quails to help the marinade penetrate, then place them in a large resealable bag or a shallow dish.
  4. Pour the marinade over the quails, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.
  5. Preheat the grill to medium-high heat.
  6. Remove the quails from the marinade and let any excess marinade drip off. Discard the used marinade.
  7. Place the quails on the grill and cook for about 15-20 minutes, turning occasionally, until the meat is cooked through and has nice grill marks.
  8. Once cooked, remove from the grill and let rest for 5 minutes before serving.
  9. Garnish with fresh parsley before serving.
