Ingredients

  • Cauliflower florets - 150 grams
  • Zucchini - 1 medium, sliced
  • Carrots - 1 medium, sliced
  • Vegan seafood (like seaweed or plant-based shrimp) - 100 grams
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cinnamon powder - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 2 tablespoons
  • Fresh parsley - for garnish
  • Lemon wedges - for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the sliced onion and garlic, sautéing until fragrant and golden.
  3. Add the cauliflower, zucchini, and carrots to the pot, stirring to combine. Season with cumin, coriander, turmeric, cinnamon, salt, and black pepper. Cook for about 5-7 minutes until the vegetables start to soften.
  4. Stir in the vegan seafood and cook for an additional 3 minutes, allowing the flavors to meld.
  5. Drain the soaked rice and add it to the pot, followed by the vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked and liquid is absorbed.
  6. Remove from heat and let it sit covered for 10 minutes. Fluff the rice gently with a fork.
  7. To serve, invert the pot onto a large serving platter, so the rice and vegetables are layered beautifully on top. Garnish with fresh parsley and serve with lemon wedges.
