Ingredients
- Basmati rice - 150 grams
- Chicken thighs, boneless and skinless - 250 grams
- Eggplant, sliced - 100 grams
- Cauliflower florets - 100 grams
- Tomato, chopped - 100 grams
- Onion, finely chopped - 1 medium
- Garlic cloves, minced - 2
- Olive oil - 2 tablespoons
- Cinnamon powder - 1 teaspoon
- Allspice - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 400 ml
- Fresh parsley, chopped - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak in water for 30 minutes.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the chicken thighs, cinnamon, allspice, salt, and black pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.
- Remove the chicken and set aside. In the same pot, add the sliced eggplant and cauliflower florets. Sauté until slightly softened, about 5 minutes.
- Add the chopped tomatoes and cooked chicken back into the pot. Stir to combine.
- Drain the soaked rice and layer it on top of the chicken and vegetables in the pot. Do not stir.
- Pour in the water, ensuring the rice is covered. Bring to a boil, then reduce heat to low and cover the pot. Cook for 20-25 minutes until the rice is tender and water is absorbed.
- Remove from heat and let it sit covered for 10 minutes. Carefully flip the pot onto a large serving dish to release the Maqlooba.
- Garnish with chopped fresh parsley and serve warm.
