Ingredients

  • All-purpose flour - 250 grams
  • Water - 150 ml
  • Active dry yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • Labneh (strained yogurt) - 100 grams
  • Grated Akkawi cheese - 100 grams
  • Zaatar (thyme mix) - 10 grams
  • Sesame seeds - 10 grams

Steps

  1. In a small bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large bowl, mix the all-purpose flour and salt. Create a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for about 15 minutes.
  4. Preheat the oven to 220°C (428°F).
  5. Once the dough has risen, divide it into two equal portions. Roll each portion into a circle about 1/2 cm thick.
  6. Spread a layer of labneh over each dough circle, leaving a small border around the edges.
  7. Sprinkle the grated Akkawi cheese evenly over the labneh, and then add zaatar and sesame seeds on top.
  8. Place the mankousheh on a baking sheet lined with parchment paper and bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  9. Remove from the oven and let cool for a minute before slicing and serving warm.
