Mankousheh with Cheese

Ingredients
- All-purpose flour - 250 grams
- Water - 150 ml
- Active dry yeast - 5 grams
- Sugar - 5 grams
- Salt - 5 grams
- Olive oil - 15 ml
- Labneh (strained yogurt) - 100 grams
- Grated Akkawi cheese - 100 grams
- Zaatar (thyme mix) - 10 grams
- Sesame seeds - 10 grams
Steps
- In a small bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5 minutes until frothy.
- In a large bowl, mix the all-purpose flour and salt. Create a well in the center and add the yeast mixture and olive oil.
- Knead the dough for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for about 15 minutes.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, divide it into two equal portions. Roll each portion into a circle about 1/2 cm thick.
- Spread a layer of labneh over each dough circle, leaving a small border around the edges.
- Sprinkle the grated Akkawi cheese evenly over the labneh, and then add zaatar and sesame seeds on top.
- Place the mankousheh on a baking sheet lined with parchment paper and bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
- Remove from the oven and let cool for a minute before slicing and serving warm.
