Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 30 ml
  • Za'atar spice mix - 30 grams

Steps

  1. In a small bowl, mix the warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 15 minutes until doubled in size.
  5. Preheat your oven to 220°C (428°F).
  6. Once the dough has risen, punch it down and divide it into 2 equal portions. Roll each portion into a flat circle, about 0.5 cm thick.
  7. Spread the za'atar evenly over the surface of the dough circles and drizzle with a little olive oil.
  8. Place the flatbreads on a baking sheet lined with parchment paper and bake for 10-12 minutes, or until golden brown.
  9. Remove from the oven and let cool slightly before slicing and serving.
