Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 4 grams
  • Olive oil - 15 ml
  • Zaatar spice blend - 30 grams
  • Additional olive oil for topping - 30 ml

Steps

  1. In a small bowl, mix warm water, sugar, and active dry yeast. Let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center, and pour in the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a lightly floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes, or until doubled in size.
  5. Preheat your oven to 220°C (428°F). Line a baking sheet with parchment paper.
  6. Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece into a circle about 10 inches in diameter.
  7. In a small bowl, mix zaatar spice blend with the additional olive oil to create a paste.
  8. Spread the zaatar mixture evenly over each rolled-out dough circle.
  9. Transfer the topped dough onto the prepared baking sheet and bake for 10-12 minutes or until the edges are golden brown.
  10. Remove from the oven, allow to cool slightly, and serve warm.
