- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Za'atar spice mix - 3 tablespoons
- Sesame seeds - 1 tablespoon
- Olive oil for brushing - 1 tablespoon
Steps
- In a small bowl, dissolve the active dry yeast in warm water and let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix the ingredients until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes, or until doubled in size.
- Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
- Punch down the risen dough and divide it into two equal portions. Roll each portion into a flat circle about 1/4 inch thick.
- In a small bowl, mix the za'atar spice mix with 2 tablespoons of olive oil until well combined.
- Spread the za'atar mixture evenly over each flatbread, then sprinkle with sesame seeds.
- Transfer the flatbreads to the prepared baking sheet and bake for 10-12 minutes, or until golden and crispy.
- Remove from the oven and brush with a little extra olive oil before serving warm.
