Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Olive oil - 30 ml
  • Salt - 5 grams
  • Zaatar spice mix - 30 grams
  • Greek yogurt - 100 grams

Steps

  1. In a bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, mix the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the mixture until it forms a smooth dough, about 8-10 minutes. Cover it with a damp cloth and let it rise in a warm place for 30 minutes.
  4. Preheat the oven to 220°C (428°F) and place a baking stone or tray inside to heat.
  5. Once the dough has doubled in size, divide it into two equal portions. Roll each portion into a round flatbread, about 1 cm thick.
  6. Spread a layer of Greek yogurt on top of each flatbread, then sprinkle generously with zaatar.
  7. Carefully place the flatbreads on the preheated baking stone or tray and bake for 12-15 minutes, or until the edges are golden brown.
  8. Remove from the oven, let cool slightly, and serve warm.
