Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams
- Olive oil - 30 ml
- Salt - 5 grams
- Zaatar spice mix - 30 grams
- Greek yogurt - 100 grams
Steps
- In a bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until frothy.
- In a large mixing bowl, mix the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Knead the mixture until it forms a smooth dough, about 8-10 minutes. Cover it with a damp cloth and let it rise in a warm place for 30 minutes.
- Preheat the oven to 220°C (428°F) and place a baking stone or tray inside to heat.
- Once the dough has doubled in size, divide it into two equal portions. Roll each portion into a round flatbread, about 1 cm thick.
- Spread a layer of Greek yogurt on top of each flatbread, then sprinkle generously with zaatar.
- Carefully place the flatbreads on the preheated baking stone or tray and bake for 12-15 minutes, or until the edges are golden brown.
- Remove from the oven, let cool slightly, and serve warm.
