Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 5 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Labneh (strained yogurt) - 100 grams
- Feta cheese - 75 grams, crumbled
- Mozzarella cheese - 75 grams, shredded
- Zaatar spice mix - 1 tablespoon
Steps
- In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
- Preheat the oven to 220°C (428°F) and place a baking tray inside to heat up.
- Once the dough has risen, punch it down and divide it into two equal portions.
- Roll each portion into a flat circle about 1 cm thick. Place the circles on a piece of parchment paper.
- Spread 50 grams of labneh on each flatbread, then sprinkle the crumbled feta and shredded mozzarella evenly over the top.
- Sprinkle zaatar spice mix generously over the cheese layer.
- Carefully slide the parchment paper with the manakish onto the preheated baking tray and bake for 10-12 minutes, or until the edges are golden and the cheese is bubbly.
- Remove from the oven, let cool slightly, then cut into wedges and serve warm.
