Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Labneh (strained yogurt) - 100 grams
  • Feta cheese - 75 grams, crumbled
  • Mozzarella cheese - 75 grams, shredded
  • Zaatar spice mix - 1 tablespoon

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Preheat the oven to 220°C (428°F) and place a baking tray inside to heat up.
  6. Once the dough has risen, punch it down and divide it into two equal portions.
  7. Roll each portion into a flat circle about 1 cm thick. Place the circles on a piece of parchment paper.
  8. Spread 50 grams of labneh on each flatbread, then sprinkle the crumbled feta and shredded mozzarella evenly over the top.
  9. Sprinkle zaatar spice mix generously over the cheese layer.
  10. Carefully slide the parchment paper with the manakish onto the preheated baking tray and bake for 10-12 minutes, or until the edges are golden and the cheese is bubbly.
  11. Remove from the oven, let cool slightly, then cut into wedges and serve warm.
