Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Fresh spinach - 200 grams, chopped
  • Feta cheese - 100 grams, crumbled
  • Mozzarella cheese - 100 grams, shredded
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Sumac - 1 teaspoon

Steps

  1. In a bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, mix all-purpose flour and salt. Add the yeast mixture and olive oil, then knead until a smooth dough forms, about 10 minutes.
  3. Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes or until doubled in size.
  4. Meanwhile, in a skillet over medium heat, sauté minced garlic in a bit of olive oil until fragrant. Add chopped spinach and cook until wilted.
  5. In a bowl, mix the sautéed spinach, crumbled feta cheese, shredded mozzarella, lemon juice, black pepper, and sumac until well combined.
  6. Preheat the oven to 220°C (428°F).
  7. Divide the risen dough into two equal pieces and roll each into a circle about 1/2 cm thick.
  8. Place the rolled dough on a baking sheet lined with parchment paper. Spread the spinach and cheese mixture evenly on top.
  9. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the cheese is bubbly.
  10. Remove from the oven, let cool slightly, slice, and serve warm.
