Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Fresh spinach - 200 grams, chopped
- Feta cheese - 100 grams, crumbled
- Mozzarella cheese - 100 grams, shredded
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Sumac - 1 teaspoon
Steps
- In a bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, mix all-purpose flour and salt. Add the yeast mixture and olive oil, then knead until a smooth dough forms, about 10 minutes.
- Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes or until doubled in size.
- Meanwhile, in a skillet over medium heat, sauté minced garlic in a bit of olive oil until fragrant. Add chopped spinach and cook until wilted.
- In a bowl, mix the sautéed spinach, crumbled feta cheese, shredded mozzarella, lemon juice, black pepper, and sumac until well combined.
- Preheat the oven to 220°C (428°F).
- Divide the risen dough into two equal pieces and roll each into a circle about 1/2 cm thick.
- Place the rolled dough on a baking sheet lined with parchment paper. Spread the spinach and cheese mixture evenly on top.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the cheese is bubbly.
- Remove from the oven, let cool slightly, slice, and serve warm.
