Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Olive oil - 30 ml
  • Salt - 5 grams
  • Red bell pepper - 1 medium, roasted and peeled
  • Walnuts - 100 grams
  • Garlic - 1 clove
  • Pomegranate molasses - 10 ml
  • Cumin - 1 teaspoon
  • Chili flakes - 1/2 teaspoon
  • Fresh parsley - a handful, chopped

Steps

  1. In a small bowl, mix warm water with active dry yeast and let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Knead the dough for about 10 minutes until smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for 30 minutes.
  4. While the dough is rising, prepare the Muhammara spread by blending roasted red bell pepper, walnuts, garlic, pomegranate molasses, cumin, and chili flakes in a food processor until smooth.
  5. Once the dough has risen, preheat your oven to 220°C (428°F) and line a baking tray with parchment paper.
  6. Divide the dough into two equal portions and roll each into a flat round shape, about 0.5 cm thick.
  7. Transfer the rolled dough to the baking tray and spread a generous layer of the Muhammara mixture over each flatbread, leaving a small border around the edges.
  8. Bake in the preheated oven for 12-15 minutes or until the edges are golden and crispy.
  9. Remove from the oven and garnish with chopped fresh parsley before serving.
