- All-purpose flour - 250 grams
- Warm water - 150 ml
- Dry yeast - 7 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Zucchini - 100 grams, grated
- Red bell pepper - 50 grams, diced
- Green bell pepper - 50 grams, diced
- Red onion - 50 grams, finely chopped
- Fresh parsley - 30 grams, chopped
- Tomato - 1 medium, diced
- Black olives - 30 grams, sliced
- Feta cheese - 50 grams, crumbled
- Black pepper - 1/2 teaspoon
Steps
- In a small bowl, combine warm water and dry yeast. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour, salt, and olive oil. Gradually add the yeast mixture and knead until a smooth dough forms.
- Cover the dough with a clean cloth and let it rise in a warm place for about 30 minutes or until doubled in size.
- While the dough rises, prepare the topping by mixing together grated zucchini, diced red and green bell peppers, chopped red onion, parsley, diced tomato, sliced olives, cumin, paprika, black pepper, and crumbled feta cheese in a bowl.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a circle about 0.5 cm thick.
- Place the rolled dough on a baking sheet lined with parchment paper. Evenly spread the vegetable topping over each dough circle.
- Bake in the preheated oven for 15-20 minutes or until the edges are golden brown and the topping is cooked through.
- Remove from the oven and let it cool for a few minutes before slicing. Serve warm.
