- All-purpose flour - 250 grams
- Active dry yeast - 5 grams
- Warm water - 150 ml
- Olive oil - 2 tablespoons
- Salt - 5 grams
- Labneh - 200 grams
- Za'atar spice mix - 2 tablespoons
- Fresh parsley - 20 grams, chopped
- Tomato - 1 medium, sliced
- Cucumber - 1 small, sliced
Steps
- In a bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour and salt. Add the yeast mixture and olive oil, then mix until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a circle about 25 cm in diameter.
- Place the rolled dough onto a baking sheet lined with parchment paper. Spread 100 grams of labneh evenly over each dough circle.
- Sprinkle 1 tablespoon of za'atar over each labneh-topped dough.
- Add sliced tomatoes and cucumbers on top for extra freshness.
- Bake in the preheated oven for about 12-15 minutes or until the edges are golden and the bottom is crisp.
- Remove from the oven, sprinkle with fresh parsley, and serve warm.
