- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 5 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Ground beef (or lamb) - 200 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Pine nuts - 30 grams, toasted
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover with a cloth, and let it rise in a warm place for 30 minutes or until doubled in size.
- While the dough is rising, heat a skillet over medium heat and add the ground meat, onion, and garlic. Cook until the meat is browned and the onions are translucent.
- Add the ground cumin, cinnamon, paprika, salt, and black pepper to the meat mixture. Stir well and cook for another 2-3 minutes. Remove from heat and stir in the parsley, lemon juice, and toasted pine nuts.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a circle about 0.5 cm thick.
- Place the rolled out dough on a baking sheet lined with parchment paper. Spread the meat mixture evenly over each base, leaving a small border around the edges.
- Bake in the preheated oven for 12-15 minutes until the edges are golden and the meat is cooked through.
- Remove from the oven and let it cool slightly before slicing. Serve warm.
