Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Ground beef (or lamb) - 200 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Pine nuts - 30 grams, toasted
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover with a cloth, and let it rise in a warm place for 30 minutes or until doubled in size.
  4. While the dough is rising, heat a skillet over medium heat and add the ground meat, onion, and garlic. Cook until the meat is browned and the onions are translucent.
  5. Add the ground cumin, cinnamon, paprika, salt, and black pepper to the meat mixture. Stir well and cook for another 2-3 minutes. Remove from heat and stir in the parsley, lemon juice, and toasted pine nuts.
  6. Preheat your oven to 220°C (428°F).
  7. Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a circle about 0.5 cm thick.
  8. Place the rolled out dough on a baking sheet lined with parchment paper. Spread the meat mixture evenly over each base, leaving a small border around the edges.
  9. Bake in the preheated oven for 12-15 minutes until the edges are golden and the meat is cooked through.
  10. Remove from the oven and let it cool slightly before slicing. Serve warm.
