Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Olive oil - 30 ml
  • Salt - 5 grams
  • Ground beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Pine nuts - 30 grams, toasted (optional)
  • Lemon wedges - for serving

Steps

  1. In a bowl, mix warm water and yeast. Let it sit for 5 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Knead the dough for about 10 minutes until smooth. Cover with a damp cloth and let it rise for 30 minutes in a warm place.
  4. In a skillet, heat a tablespoon of olive oil over medium heat. Add chopped onion and sauté until translucent.
  5. Add minced garlic and ground beef to the skillet. Cook until the beef is browned, breaking it apart with a spoon.
  6. Stir in cumin, cinnamon, paprika, salt, black pepper, and parsley. Cook for another 5 minutes until well combined. Remove from heat.
  7. Preheat your oven to 220°C (428°F).
  8. Once the dough has risen, divide it into two equal pieces and roll each piece into a circle about 25 cm in diameter.
  9. Place the rolled dough on a baking sheet lined with parchment paper. Spread the beef mixture evenly over each dough circle.
  10. If using, sprinkle toasted pine nuts on top of the beef.
  11. Bake in the preheated oven for 15-20 minutes until the crust is golden brown.
  12. Remove from the oven and let cool slightly. Serve with lemon wedges.
