Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Za'atar spice mix - 2 tablespoons
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Radishes - 4, thinly sliced
  • Parsley - 1/4 cup, chopped
  • Mint - 1/4 cup, chopped
  • Lemon juice - 2 tablespoons
  • Pomegranate seeds - 2 tablespoons
  • Olive oil (for dressing) - 1 tablespoon

Steps

  1. In a bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until foamy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Preheat the oven to 220°C (428°F) and place a baking sheet inside to heat.
  6. Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece out into a circle about 0.5 cm thick.
  7. Spread za'atar evenly over each dough circle, pressing it gently into the surface.
  8. Carefully transfer the flatbreads onto the preheated baking sheet and bake for 8-10 minutes or until golden and crispy.
  9. While the flatbreads are baking, prepare the Fattoush salad by combining diced tomato, cucumber, radishes, parsley, mint, lemon juice, and olive oil in a bowl. Toss well to combine.
  10. Once the Manakish is out of the oven, top with the Fattoush salad and sprinkle with pomegranate seeds before serving.
