Manakish Fattoush

Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Za'atar spice mix - 2 tablespoons
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Radishes - 4, thinly sliced
- Parsley - 1/4 cup, chopped
- Mint - 1/4 cup, chopped
- Lemon juice - 2 tablespoons
- Pomegranate seeds - 2 tablespoons
- Olive oil (for dressing) - 1 tablespoon
Steps
- In a bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until foamy.
- In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
- Preheat the oven to 220°C (428°F) and place a baking sheet inside to heat.
- Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece out into a circle about 0.5 cm thick.
- Spread za'atar evenly over each dough circle, pressing it gently into the surface.
- Carefully transfer the flatbreads onto the preheated baking sheet and bake for 8-10 minutes or until golden and crispy.
- While the flatbreads are baking, prepare the Fattoush salad by combining diced tomato, cucumber, radishes, parsley, mint, lemon juice, and olive oil in a bowl. Toss well to combine.
- Once the Manakish is out of the oven, top with the Fattoush salad and sprinkle with pomegranate seeds before serving.
