- All-purpose flour - 250 grams
- Active dry yeast - 7 grams (1 packet)
- Warm water - 150 milliliters
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Labneh (strained yogurt) - 100 grams
- Feta cheese - 100 grams, crumbled
- Mozzarella cheese - 100 grams, shredded
- Dried oregano - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- In a mixing bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until it becomes frothy.
- Add all-purpose flour, olive oil, and salt to the yeast mixture. Mix until a dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.
- Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
- Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece into a circle about 25 cm in diameter.
- Spread 50 grams of labneh evenly on each dough circle, leaving a small border around the edges.
- In a bowl, mix the crumbled feta and shredded mozzarella with dried oregano and black pepper. Sprinkle the cheese mixture evenly over the labneh.
- Transfer the prepared manakish to the baking sheet and bake in the preheated oven for 12-15 minutes or until the edges are golden and the cheese is bubbling.
- Remove from the oven, let it cool slightly, slice, and serve warm.
