Ingredients

  • All-purpose flour - 250 grams
  • Active dry yeast - 7 grams (1 packet)
  • Warm water - 150 milliliters
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Labneh (strained yogurt) - 100 grams
  • Feta cheese - 100 grams, crumbled
  • Mozzarella cheese - 100 grams, shredded
  • Dried oregano - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a mixing bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until it becomes frothy.
  2. Add all-purpose flour, olive oil, and salt to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  4. Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
  5. Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece into a circle about 25 cm in diameter.
  6. Spread 50 grams of labneh evenly on each dough circle, leaving a small border around the edges.
  7. In a bowl, mix the crumbled feta and shredded mozzarella with dried oregano and black pepper. Sprinkle the cheese mixture evenly over the labneh.
  8. Transfer the prepared manakish to the baking sheet and bake in the preheated oven for 12-15 minutes or until the edges are golden and the cheese is bubbling.
  9. Remove from the oven, let it cool slightly, slice, and serve warm.
