- Chickpeas - 100 grams, cooked
- Lemon juice - 1 tablespoon
- Ground cumin - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a medium saucepan, bring the water and salt to a boil.
- Gradually whisk in the cornmeal, stirring continuously to prevent lumps from forming.
- Reduce heat to low and continue to cook the cornmeal for about 15-20 minutes, stirring frequently until it thickens and pulls away from the sides of the pan.
- In a separate pan, heat olive oil over medium heat and add minced garlic, sautéing until fragrant.
- Add the spinach and cook until wilted, then add the chickpeas, lemon juice, and ground cumin, stirring to combine and heat through.
- Once the mamaliga is ready, pour it onto plates or into bowls, creating a well in the center.
- Spoon the spinach and chickpea mixture into the well and garnish with chopped parsley before serving.
