Ingredients

  • Cornmeal - 100 grams
  • Water - 600 milliliters
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Spinach - 100 grams, fresh or frozen
  • Chickpeas - 100 grams, cooked
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a medium saucepan, bring the water and salt to a boil.
  2. Gradually whisk in the cornmeal, stirring continuously to prevent lumps from forming.
  3. Reduce heat to low and continue to cook the cornmeal for about 15-20 minutes, stirring frequently until it thickens and pulls away from the sides of the pan.
  4. In a separate pan, heat olive oil over medium heat and add minced garlic, sautéing until fragrant.
  5. Add the spinach and cook until wilted, then add the chickpeas, lemon juice, and ground cumin, stirring to combine and heat through.
  6. Once the mamaliga is ready, pour it onto plates or into bowls, creating a well in the center.
  7. Spoon the spinach and chickpea mixture into the well and garnish with chopped parsley before serving.
