Ingredients

  • Ground lamb - 300 grams
  • Ground beef - 200 grams
  • Garlic - 3 cloves, minced
  • Onion - 1 small, finely chopped
  • Pine nuts - 30 grams, toasted
  • Allspice - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Sausage casing - 2 meters (optional, if making links)

Steps

  1. In a large mixing bowl, combine the ground lamb and ground beef.
  2. Add the minced garlic, chopped onion, toasted pine nuts, allspice, cinnamon, cumin, salt, black pepper, chopped parsley, and chopped mint to the meat mixture.
  3. Mix the ingredients thoroughly by hand or with a fork until well combined.
  4. If using sausage casing, rinse it in cold water and soak it for 30 minutes to soften.
  5. Stuff the sausage casing with the meat mixture using a sausage stuffer, tying off the ends, or shape the mixture into patties if not using casings.
  6. Heat a grill or BBQ to medium-high heat and brush with olive oil.
  7. Cook the sausages or patties for about 15-20 minutes, turning occasionally until fully cooked and browned on all sides.
  8. Serve hot with fresh pita bread, tahini sauce, or a side of tabbouleh.
