Ingredients

  • Mackerel fillets - 2 (about 200g each)
  • Pomegranate seeds - 100g
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Pine nuts - 30g, toasted

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix olive oil, lemon juice, minced garlic, cumin, salt, and black pepper to create a marinade.
  3. Place the mackerel fillets in a baking dish and pour the marinade over them, ensuring they are well coated. Let them marinate for about 10 minutes.
  4. While the mackerel is marinating, prepare a baking sheet lined with parchment paper.
  5. After marination, place the fillets on the prepared baking sheet skin-side down.
  6. Bake the mackerel in the preheated oven for about 15-20 minutes, or until the fish flakes easily with a fork.
  7. Once the mackerel is cooked, remove it from the oven and let it rest for a couple of minutes.
  8. To serve, sprinkle the mackerel with pomegranate seeds, chopped parsley, and toasted pine nuts.
