Ingredients
- All-purpose flour - 150g
- Semolina - 50g
- Unsalted butter - 100g, softened
- Powdered sugar - 50g
- Water - 30ml
- Rosewater - 1 tablespoon
- Date paste - 100g (or finely chopped nuts, like pistachios or walnuts)
- Ground cinnamon - 1/2 teaspoon
- Ground nutmeg - 1/4 teaspoon
- Salt - a pinch
Steps
- In a mixing bowl, combine the all-purpose flour, semolina, and a pinch of salt.
- In another bowl, cream the softened butter and powdered sugar until light and fluffy.
- Gradually mix the dry ingredients into the butter mixture, then add water and rosewater, kneading until a soft dough forms.
- Cover the dough with plastic wrap and let it rest for 30 minutes.
- While the dough rests, prepare the filling by mixing date paste (or chopped nuts) with ground cinnamon and nutmeg.
- Preheat the oven to 180°C (350°F).
- Divide the dough into small balls, about the size of a walnut.
- Flatten each ball and place a teaspoon of filling in the center, then fold the edges over to seal and shape into a round cookie.
- Place the cookies on a lined baking sheet and use a fork or mold to create patterns on top.
- Bake in the preheated oven for about 15-20 minutes, or until lightly golden.
- Allow the cookies to cool on a wire rack before serving.
