Ingredients
- Semolina - 100 grams
- All-purpose flour - 100 grams
- Unsalted butter - 80 grams, softened
- Powdered sugar - 30 grams
- Yeast - 1 teaspoon
- Water - 50 ml
- Orange blossom water - 1 tablespoon
- Salt - 1/4 teaspoon
- Dates - 100 grams, pitted and mashed
- Walnuts - 50 grams, finely chopped
- Ground cinnamon - 1/2 teaspoon
- Powdered sugar for dusting - as needed
Steps
- In a large bowl, combine the semolina, all-purpose flour, powdered sugar, yeast, and salt.
- Add the softened butter and mix until the mixture resembles coarse crumbs.
- Gradually add the water and orange blossom water, mixing until a soft dough forms.
- Cover the dough with a clean cloth and let it rest for about 30 minutes.
- In a separate bowl, mix the mashed dates, chopped walnuts, and ground cinnamon to create the filling.
- Preheat the oven to 180°C (350°F).
- Take a small piece of dough and flatten it in your palm, placing a teaspoon of the filling in the center.
- Fold the dough over the filling and shape it into a ball, then place it in a maamoul mold or shape it by hand.
- Repeat with the remaining dough and filling.
- Place the shaped maamoul on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes or until lightly golden.
- Allow to cool, then dust with powdered sugar before serving.
