Lentil Soup with Fish

Ingredients
- Green lentils - 100 grams
- Water - 1 liter
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 small, diced
- Celery - 1 stalk, diced
- Tomato - 1 medium, diced
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fish fillets (white fish like cod or haddock) - 200 grams
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the lentils under cold water and set aside.
- In a pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
- Add the diced tomato, cumin, salt, and black pepper to the pot. Stir well and cook for another 3 minutes.
- Pour in the water and add the rinsed lentils. Bring to a boil, then reduce heat to low and simmer for about 20 minutes, or until the lentils are tender.
- While the lentils are cooking, season the fish fillets with lemon juice, salt, and pepper.
- After the lentils are cooked, carefully place the fish fillets on top of the soup. Cover and steam the fish in the soup for about 5-7 minutes, or until cooked through.
- Once the fish is cooked, gently stir the soup to combine the flavors. Adjust seasoning if necessary.
- Serve hot, garnished with chopped fresh parsley.
