Ingredients
- Green or brown lentils - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 small, diced
- Celery - 1 stalk, diced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Vegetable broth - 500 ml
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat.
- Add the diced onion, carrot, and celery to the pot. Sauté for about 5-7 minutes until the vegetables are softened.
- Stir in the minced garlic, cumin, coriander, and paprika. Cook for an additional 1-2 minutes until fragrant.
- Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low.
- Cover and simmer for 25-30 minutes, or until the lentils are tender. Stir occasionally.
- Season the soup with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley.
