Ingredients

  • Green or brown lentils - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 small, diced
  • Celery - 1 stalk, diced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Vegetable broth - 500 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat.
  3. Add the diced onion, carrot, and celery to the pot. Sauté for about 5-7 minutes until the vegetables are softened.
  4. Stir in the minced garlic, cumin, coriander, and paprika. Cook for an additional 1-2 minutes until fragrant.
  5. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low.
  6. Cover and simmer for 25-30 minutes, or until the lentils are tender. Stir occasionally.
  7. Season the soup with salt and black pepper to taste.
  8. Serve hot, garnished with fresh parsley.
