Ingredients

  • Brown or green lentils - 100 grams
  • Water - 750 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon (adjust to taste)
  • Black pepper - 1/2 teaspoon
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat.
  3. Add the diced onion, garlic, carrot, and celery to the pot and sauté for about 5 minutes, until the vegetables are soft.
  4. Stir in the cumin, coriander, turmeric, salt, and black pepper, cooking for another minute until fragrant.
  5. Add the rinsed lentils and water to the pot, bringing it to a boil.
  6. Once boiling, reduce the heat to low, cover, and let simmer for about 25-30 minutes, or until the lentils are tender.
  7. Remove from heat and stir in the lemon juice.
  8. Serve hot, garnished with fresh parsley.
