Ingredients
- Brown or green lentils - 100 grams
- Water - 750 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon (adjust to taste)
- Black pepper - 1/2 teaspoon
- Lemon - 1, juiced
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat.
- Add the diced onion, garlic, carrot, and celery to the pot and sauté for about 5 minutes, until the vegetables are soft.
- Stir in the cumin, coriander, turmeric, salt, and black pepper, cooking for another minute until fragrant.
- Add the rinsed lentils and water to the pot, bringing it to a boil.
- Once boiling, reduce the heat to low, cover, and let simmer for about 25-30 minutes, or until the lentils are tender.
- Remove from heat and stir in the lemon juice.
- Serve hot, garnished with fresh parsley.
