- Green or brown lentils - 150 grams
- Cucumber - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Red onion - 1 small, finely chopped
- Parsley - 30 grams, chopped
- Mint leaves - 10 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Rinse the lentils under cold water and then cook them in a pot of boiling salted water for about 20 minutes, or until tender. Drain and set aside to cool.
- While the lentils are cooking, prepare the vegetables: dice the cucumber, halve the cherry tomatoes, and finely chop the red onion, parsley, and mint leaves.
- In a large mixing bowl, combine the cooked lentils, diced cucumber, halved cherry tomatoes, chopped red onion, parsley, and mint.
