Ingredients

  • Green or brown lentils - 150 grams
  • Cucumber - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 1 small, finely chopped
  • Parsley - 30 grams, chopped
  • Mint leaves - 10 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Rinse the lentils under cold water and then cook them in a pot of boiling salted water for about 20 minutes, or until tender. Drain and set aside to cool.
  2. While the lentils are cooking, prepare the vegetables: dice the cucumber, halve the cherry tomatoes, and finely chop the red onion, parsley, and mint leaves.
  3. In a large mixing bowl, combine the cooked lentils, diced cucumber, halved cherry tomatoes, chopped red onion, parsley, and mint.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
  5. Pour the dressing over the lentil and vegetable mixture and toss gently to combine.
  6. If desired, sprinkle crumbled feta cheese on top before serving.
