Ingredients
- Lentils - 100g
- Cauliflower Rice - 300g
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive Oil - 2 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Vegetable Broth - 500ml
- Fresh Parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Rinse the lentils under cold water and drain them.
- In a pot, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
- Add the minced garlic, cumin, coriander, salt, and black pepper to the pot. Cook for another 2 minutes until fragrant.
- Stir in the lentils and vegetable broth. Bring to a boil, then reduce to a simmer and cover. Cook for 15-20 minutes, until lentils are tender.
- While the lentils are cooking, prepare the cauliflower rice. In a separate pan, sauté the cauliflower rice in a little olive oil over medium heat for about 5-7 minutes until tender.
- Once the lentils are done, mix in the cooked cauliflower rice and fresh parsley. Drizzle with lemon juice and stir to combine.
- Serve warm, garnished with additional parsley if desired.
