Lentil Rice

Ingredients
- Brown lentils - 100 grams
- Basmati rice - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the brown lentils under cold water and soak them in water for 30 minutes.
- In a medium pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Drain the lentils and add them to the pot. Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 20 minutes, or until the lentils are tender.
- While the lentils are cooking, rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- Once the lentils are tender, add the soaked rice to the pot along with ground cumin, ground coriander, salt, and black pepper. Stir well to combine.
- Cover the pot and cook on low heat for another 15 minutes, or until the rice is fluffy and has absorbed all the liquid.
- Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice and lentils with a fork before serving.
- Garnish with chopped fresh parsley and enjoy!
