Lentil Rice

Ingredients

  • Brown lentils - 100 grams
  • Basmati rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the brown lentils under cold water and soak them in water for 30 minutes.
  2. In a medium pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Drain the lentils and add them to the pot. Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 20 minutes, or until the lentils are tender.
  5. While the lentils are cooking, rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  6. Once the lentils are tender, add the soaked rice to the pot along with ground cumin, ground coriander, salt, and black pepper. Stir well to combine.
  7. Cover the pot and cook on low heat for another 15 minutes, or until the rice is fluffy and has absorbed all the liquid.
  8. Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice and lentils with a fork before serving.
  9. Garnish with chopped fresh parsley and enjoy!
