Ingredients

  • Red lentils - 150g
  • Water - 500ml
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Tomato paste - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the red lentils under cold water until the water runs clear.
  2. In a medium saucepan, combine the lentils and water. Bring to a boil, then reduce heat and simmer for about 15 minutes or until the lentils are tender.
  3. While the lentils are cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic to the skillet and sauté for an additional minute until fragrant.
  5. Stir in the tomato paste, cumin, paprika, salt, and black pepper. Cook for another 2-3 minutes, allowing the spices to blend.
  6. Once the lentils are cooked, drain any excess water and add them to the skillet with the spice mixture. Stir to combine and cook for another 5 minutes.
  7. Remove from heat and stir in the chopped parsley and lemon juice.
  8. Serve the lentil pasta warm, garnished with additional parsley if desired.
