Ingredients
- Red lentils - 150g
- Water - 500ml
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Tomato paste - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the red lentils under cold water until the water runs clear.
- In a medium saucepan, combine the lentils and water. Bring to a boil, then reduce heat and simmer for about 15 minutes or until the lentils are tender.
- While the lentils are cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic to the skillet and sauté for an additional minute until fragrant.
- Stir in the tomato paste, cumin, paprika, salt, and black pepper. Cook for another 2-3 minutes, allowing the spices to blend.
- Once the lentils are cooked, drain any excess water and add them to the skillet with the spice mixture. Stir to combine and cook for another 5 minutes.
- Remove from heat and stir in the chopped parsley and lemon juice.
- Serve the lentil pasta warm, garnished with additional parsley if desired.
