Lentil Mujadara

Ingredients
- Brown lentils - 100 grams
- Long-grain rice - 100 grams
- Onion - 1 large, thinly sliced
- Olive oil - 3 tablespoons
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500 milliliters
- Lemon - 1, for serving (optional)
Steps
- Rinse the lentils under cold water until the water runs clear, then soak them in water for about 20 minutes.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 15-20 minutes. Remove half of the onions and set aside for topping.
- Add the soaked lentils, cumin, salt, and black pepper to the saucepan with the remaining onions. Stir for a minute to toast the spices.
- Pour in 500 milliliters of water and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
- Meanwhile, rinse the rice under cold water and drain. After the lentils have simmered for 15 minutes, add the rice to the pot. Stir gently to combine.
- Cover and cook for an additional 20 minutes on low heat, or until the rice is tender and the water is absorbed.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
- Serve the Mujadara warm, topped with the reserved caramelized onions and a wedge of lemon if desired.
