Ingredients

  • Red lentils - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Fresh parsley - 30 grams, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Pita bread - 2 pieces, for serving
  • Tahini sauce - for drizzling (optional)

Steps

  1. Rinse the red lentils under cold water until the water runs clear, then cook in a pot of boiling water for about 20 minutes until tender, then drain and let cool.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat, add the chopped onion and minced garlic, and sauté until translucent, about 5 minutes.
  3. In a mixing bowl, combine the cooked lentils, sautéed onions, grated carrot, chopped parsley, cumin, coriander, paprika, salt, black pepper, lemon juice, and the remaining olive oil. Mix well until everything is evenly combined.
  4. Using your hands, shape the lentil mixture into kebab shapes or patties, about 10 cm long and 2.5 cm wide. You should get approximately 4 kebabs.
  5. Preheat your grill or grill pan over medium-high heat. Lightly brush the grill with oil to prevent sticking.
  6. Grill the kebabs for about 4-5 minutes on each side until they are golden brown and slightly crispy.
  7. Serve the lentil kebabs in pita bread with tahini sauce and fresh vegetables, if desired.
