Ingredients

  • Brown lentils - 150 grams
  • Water - 500 ml
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Breadcrumbs - 50 grams
  • Egg - 1 large
  • Pita bread - 2 pieces
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Tahini sauce - for serving

Steps

  1. Rinse the lentils under cold water, then combine them with 500 ml of water in a pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain any excess water.
  2. In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 5 minutes.
  3. Add the grated carrot, cumin, coriander, paprika, salt, and black pepper to the skillet. Cook for another 3-4 minutes until the carrots are softened.
  4. In a large bowl, combine the cooked lentils, sautéed mixture, chopped parsley, breadcrumbs, and beaten egg. Mix well and form into two patties.
  5. Heat a non-stick skillet over medium heat. Cook the lentil patties for 4-5 minutes on each side until golden brown and crispy.
  6. To assemble, place each patty on a pita bread, add lettuce and tomato slices, and drizzle with tahini sauce. Serve warm.
