- Green or brown lentils - 150 grams
- Fresh spinach - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Tomato - 1 large, diced
- Vegetable broth - 500 milliliters
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced carrot to the pot, cooking for an additional 3 minutes until fragrant.
- Stir in the diced tomato, cumin, coriander, salt, and black pepper. Cook for 5 minutes until the tomato softens.
- Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer for 25 minutes, or until the lentils are tender.
- In the last 5 minutes of cooking, add the fresh spinach and stir until wilted.
- Remove from heat, stir in the lemon juice, and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
