Ingredients

  • green lentils - 100 grams
  • water - 500 ml
  • olive oil - 2 tablespoons
  • onion - 1 medium, diced
  • garlic - 3 cloves, minced
  • carrot - 1 medium, diced
  • celery - 1 stalk, diced
  • tomato - 1 medium, chopped
  • cumin - 1 teaspoon
  • coriander - 1 teaspoon
  • paprika - 1 teaspoon
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • fish fillet (white fish like cod or haddock) - 200 grams, cut into chunks
  • lemon juice - 2 tablespoons
  • fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat and sauté the diced onion, garlic, carrot, and celery until soft, about 5-7 minutes.
  3. Add the chopped tomato, cumin, coriander, paprika, salt, and black pepper to the pot, stirring for another 2 minutes until fragrant.
  4. Add the rinsed lentils and water to the pot, bringing the mixture to a boil.
  5. Reduce the heat to low, cover, and simmer for about 20 minutes, or until the lentils are tender.
  6. Once the lentils are cooked, add the fish chunks to the stew, cover, and cook for an additional 5-7 minutes until the fish is cooked through.
  7. Stir in the lemon juice and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh parsley.
