- green lentils - 100 grams
- water - 500 ml
- olive oil - 2 tablespoons
- onion - 1 medium, diced
- garlic - 3 cloves, minced
- carrot - 1 medium, diced
- celery - 1 stalk, diced
- tomato - 1 medium, chopped
- cumin - 1 teaspoon
- coriander - 1 teaspoon
- paprika - 1 teaspoon
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- fish fillet (white fish like cod or haddock) - 200 grams, cut into chunks
- lemon juice - 2 tablespoons
- fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat and sauté the diced onion, garlic, carrot, and celery until soft, about 5-7 minutes.
- Add the chopped tomato, cumin, coriander, paprika, salt, and black pepper to the pot, stirring for another 2 minutes until fragrant.
- Add the rinsed lentils and water to the pot, bringing the mixture to a boil.
- Reduce the heat to low, cover, and simmer for about 20 minutes, or until the lentils are tender.
- Once the lentils are cooked, add the fish chunks to the stew, cover, and cook for an additional 5-7 minutes until the fish is cooked through.
- Stir in the lemon juice and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
