- Chicken thighs (boneless, skinless) - 400 grams
- Garlic - 4 cloves, minced
- Lemon juice - 60 ml (about 2 lemons)
- Olive oil - 30 ml
- Fresh parsley - 15 grams, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Sumac - 1 teaspoon (optional)
Steps
- In a bowl, mix the minced garlic, lemon juice, olive oil, chopped parsley, salt, black pepper, paprika, cumin, and sumac to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat the grill or barbecue to medium-high heat.
- Remove the chicken from the marinade and discard the leftover marinade.
- Grill the chicken thighs for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 75°C (165°F).
- Once cooked, remove from the grill and let rest for 5 minutes before slicing.
- Serve the grilled chicken garnished with additional chopped parsley and lemon wedges on the side.
