Ingredients

  • Chicken thighs (boneless, skinless) - 400 grams
  • Garlic - 4 cloves, minced
  • Lemon juice - 60 ml (about 2 lemons)
  • Olive oil - 30 ml
  • Fresh parsley - 15 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Sumac - 1 teaspoon (optional)

Steps

  1. In a bowl, mix the minced garlic, lemon juice, olive oil, chopped parsley, salt, black pepper, paprika, cumin, and sumac to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat the grill or barbecue to medium-high heat.
  4. Remove the chicken from the marinade and discard the leftover marinade.
  5. Grill the chicken thighs for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 75°C (165°F).
  6. Once cooked, remove from the grill and let rest for 5 minutes before slicing.
  7. Serve the grilled chicken garnished with additional chopped parsley and lemon wedges on the side.
