Ingredients

  • Cauliflower - 300 grams
  • Almond flour - 100 grams
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Zaatar spice mix - 2 teaspoons
  • Tomato sauce - 100 grams
  • Mozzarella cheese - 100 grams, shredded
  • Bell pepper - 50 grams, thinly sliced
  • Red onion - 50 grams, thinly sliced
  • Cherry tomatoes - 100 grams, halved
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a food processor, pulse the cauliflower until it resembles rice, then steam it for 5 minutes.
  3. Allow the steamed cauliflower to cool, then transfer it to a clean kitchen towel and squeeze out excess moisture.
  4. In a bowl, combine the drained cauliflower, almond flour, egg, olive oil, garlic powder, salt, and black pepper to form a dough.
  5. Line a baking tray with parchment paper and spread the cauliflower dough into a round pizza shape, about 1 cm thick.
  6. Bake the crust in the preheated oven for 15 minutes until golden and firm.
  7. Remove the crust, spread the tomato sauce evenly over the base, and sprinkle with zaatar seasoning.
  8. Top with shredded mozzarella cheese, sliced bell pepper, red onion, and halved cherry tomatoes.
  9. Return the pizza to the oven and bake for an additional 10 minutes until the cheese is melted and bubbly.
  10. Remove from the oven, garnish with chopped fresh parsley, slice, and serve warm.
