Ingredients

  • Chickpeas - 200 grams, cooked
  • Carrot - 1 medium, grated
  • Zucchini - 1 medium, grated
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • All-purpose flour - 3 tablespoons
  • Olive oil - 2 tablespoons (for frying)
  • Whole wheat burger buns - 2
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 1 tablespoon (for tahini sauce)
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced

Steps

  1. In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth.
  2. Add the grated carrot, grated zucchini, chopped red onion, minced garlic, chopped parsley, cumin, coriander, salt, and black pepper to the mashed chickpeas. Mix well.
  3. Gradually add the all-purpose flour to the mixture until it holds together but is not too dry. Form the mixture into two patties.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
  5. While the patties are cooking, prepare the tahini sauce by mixing tahini, lemon juice, and water in a small bowl until smooth. Adjust the consistency with more water if needed.
  6. To serve, place each vegetable burger on a whole wheat bun, topped with lettuce, tomato slices, and a generous drizzle of the tahini sauce.
