Ingredients
- Chickpeas - 200 grams, cooked
- Carrot - 1 medium, grated
- Zucchini - 1 medium, grated
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- All-purpose flour - 3 tablespoons
- Olive oil - 2 tablespoons (for frying)
- Whole wheat burger buns - 2
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 1 tablespoon (for tahini sauce)
- Lettuce leaves - 2
- Tomato - 1 medium, sliced
Steps
- In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth.
- Add the grated carrot, grated zucchini, chopped red onion, minced garlic, chopped parsley, cumin, coriander, salt, and black pepper to the mashed chickpeas. Mix well.
- Gradually add the all-purpose flour to the mixture until it holds together but is not too dry. Form the mixture into two patties.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, prepare the tahini sauce by mixing tahini, lemon juice, and water in a small bowl until smooth. Adjust the consistency with more water if needed.
- To serve, place each vegetable burger on a whole wheat bun, topped with lettuce, tomato slices, and a generous drizzle of the tahini sauce.
