Ingredients

  • All-purpose flour - 250 grams
  • Olive oil - 30 ml
  • Warm water - 120 ml
  • Salt - 1 teaspoon
  • Fresh spinach - 200 grams, chopped
  • Onion - 1 medium, finely chopped
  • Lemon juice - 1 tablespoon
  • Sumac - 1 teaspoon
  • Salt - 1/2 teaspoon (for filling)
  • Pepper - 1/4 teaspoon
  • Pine nuts - 30 grams (optional)

Steps

  1. In a large bowl, mix the flour and salt. Create a well in the center and add the olive oil and warm water. Knead until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.
  2. Meanwhile, in a skillet over medium heat, sauté the chopped onion in a little olive oil until translucent. Add the chopped spinach and cook until wilted, about 3-4 minutes.
  3. Remove from heat and stir in lemon juice, sumac, salt, pepper, and pine nuts if using. Allow the filling to cool.
  4. Preheat your oven to 180°C (350°F).
  5. Divide the dough into 8 equal pieces. Roll each piece into a circle about 10 cm in diameter. Place a spoonful of the spinach filling in the center of each circle.
  6. Fold the dough over to create a half-moon shape and pinch the edges together to seal. Optionally, you can crimp the edges for a decorative touch.
  7. Place the pies on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
  8. Serve warm or at room temperature.
