Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, finely chopped
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Allspice - 1/4 teaspoon
  • Oats - 50 grams, ground into flour
  • Olive oil - 2 tablespoons
  • Tahini - 2 tablespoons
  • Lemon - 1, juiced
  • Whole grain burger buns - 2
  • Romaine lettuce - 2 leaves
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced

Steps

  1. In a large bowl, mash the chickpeas with a fork until mostly smooth, leaving a few chunks for texture.
  2. Add the chopped red onion, minced garlic, parsley, cumin, coriander, paprika, salt, black pepper, allspice, and ground oats to the mashed chickpeas. Mix well until combined.
  3. Form the mixture into two patties, about 2 cm thick.
  4. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
  5. In a small bowl, mix tahini with lemon juice, adding water as needed to achieve a drizzling consistency.
  6. To assemble, place each burger patty on a whole grain bun, top with lettuce, tomato, and cucumber slices, and drizzle with tahini sauce.
