- Canned chickpeas - 400 grams, drained and rinsed
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, finely chopped
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Allspice - 1/4 teaspoon
- Oats - 50 grams, ground into flour
- Olive oil - 2 tablespoons
- Tahini - 2 tablespoons
- Lemon - 1, juiced
- Whole grain burger buns - 2
- Romaine lettuce - 2 leaves
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
Steps
- In a large bowl, mash the chickpeas with a fork until mostly smooth, leaving a few chunks for texture.
- Add the chopped red onion, minced garlic, parsley, cumin, coriander, paprika, salt, black pepper, allspice, and ground oats to the mashed chickpeas. Mix well until combined.
- Form the mixture into two patties, about 2 cm thick.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
- In a small bowl, mix tahini with lemon juice, adding water as needed to achieve a drizzling consistency.
- To assemble, place each burger patty on a whole grain bun, top with lettuce, tomato, and cucumber slices, and drizzle with tahini sauce.
