- Boneless chicken thighs - 300 grams
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground paprika - 1 teaspoon
- Ground turmeric - 1/2 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pita bread - 2 pieces
- Tahini - 2 tablespoons
- Cucumber - 1/2, diced
- Tomato - 1, diced
- Pickled turnips - 50 grams
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a bowl, combine minced garlic, cumin, coriander, paprika, turmeric, cinnamon, olive oil, lemon juice, salt, and black pepper to create a marinade.
- Add the chicken thighs to the marinade and coat well. Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 5-7 minutes on each side until cooked through and slightly charred.
- Once cooked, let the chicken rest for a few minutes, then slice it thinly.
- Warm the pita bread on the grill for about 1 minute on each side until soft.
- Spread tahini on each pita, then layer with sliced chicken, diced cucumber, diced tomato, pickled turnips, and chopped parsley.
- Roll up the pita tightly and serve immediately.
