Ingredients

  • Boneless chicken thighs - 300 grams
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground paprika - 1 teaspoon
  • Ground turmeric - 1/2 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pita bread - 2 pieces
  • Tahini - 2 tablespoons
  • Cucumber - 1/2, diced
  • Tomato - 1, diced
  • Pickled turnips - 50 grams
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a bowl, combine minced garlic, cumin, coriander, paprika, turmeric, cinnamon, olive oil, lemon juice, salt, and black pepper to create a marinade.
  2. Add the chicken thighs to the marinade and coat well. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 5-7 minutes on each side until cooked through and slightly charred.
  4. Once cooked, let the chicken rest for a few minutes, then slice it thinly.
  5. Warm the pita bread on the grill for about 1 minute on each side until soft.
  6. Spread tahini on each pita, then layer with sliced chicken, diced cucumber, diced tomato, pickled turnips, and chopped parsley.
  7. Roll up the pita tightly and serve immediately.
