- Basmati rice - 1 cup
- Water - 2 cups
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon stick - 1
- Allspice - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pine nuts - 2 tablespoons, toasted
- Raisins - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional 1 minute until fragrant.
- Add the soaked rice to the saucepan and stir to coat the grains in the oil, cooking for about 2 minutes.
- Add the water, cinnamon stick, allspice, salt, and black pepper to the saucepan. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes until the rice is tender and water is absorbed.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, then stir in the toasted pine nuts, raisins, and chopped parsley before serving.
