Ingredients
- Quinoa - 100g
- Cucumber - 100g, diced
- Cherry tomatoes - 100g, halved
- Red bell pepper - 50g, diced
- Red onion - 25g, finely chopped
- Parsley - 20g, chopped
- Mint - 10g, chopped
- Olive oil - 30ml
- Lemon juice - 15ml
- Salt - 1g
- Black pepper - 1g
Steps
- Rinse the quinoa under cold water and drain.
- In a medium saucepan, combine the quinoa with 200ml of water and a pinch of salt. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and water is absorbed.
- Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
- In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, diced red bell pepper, finely chopped red onion, chopped parsley, and chopped mint.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
- Add the cooked quinoa to the vegetable mixture and pour the dressing over it. Toss everything together until well combined.
- Serve chilled or at room temperature.
