Ingredients

  • Quinoa - 100g
  • Cucumber - 100g, diced
  • Cherry tomatoes - 100g, halved
  • Red bell pepper - 50g, diced
  • Red onion - 25g, finely chopped
  • Parsley - 20g, chopped
  • Mint - 10g, chopped
  • Olive oil - 30ml
  • Lemon juice - 15ml
  • Salt - 1g
  • Black pepper - 1g

Steps

  1. Rinse the quinoa under cold water and drain.
  2. In a medium saucepan, combine the quinoa with 200ml of water and a pinch of salt. Bring to a boil.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and water is absorbed.
  4. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
  5. In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, diced red bell pepper, finely chopped red onion, chopped parsley, and chopped mint.
  6. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
  7. Add the cooked quinoa to the vegetable mixture and pour the dressing over it. Toss everything together until well combined.
  8. Serve chilled or at room temperature.
