- Quinoa - 150 grams
- Water - 500 ml
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium
- Bell pepper, diced - 1 medium
- Zucchini, diced - 1 medium
- Pine nuts - 30 grams
- Raisins - 30 grams
- Cinnamon - 1/2 teaspoon
- Allspice - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley, chopped - 2 tablespoons
Steps
- Rinse the quinoa under cold water until the water runs clear to remove any bitterness.
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the water is absorbed.
- While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Add the diced carrot, bell pepper, and zucchini to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
- Stir in the pine nuts, raisins, cinnamon, allspice, salt, and black pepper. Cook for an additional 2 minutes, allowing the flavors to meld together.
- Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the vegetable mixture. Stir well to combine all ingredients.
- Remove from heat and garnish with fresh parsley before serving.
