Ingredients

  • Quinoa - 150 grams
  • Water - 500 ml
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium
  • Bell pepper, diced - 1 medium
  • Zucchini, diced - 1 medium
  • Pine nuts - 30 grams
  • Raisins - 30 grams
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Rinse the quinoa under cold water until the water runs clear to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the water is absorbed.
  3. While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  4. Add the diced carrot, bell pepper, and zucchini to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
  5. Stir in the pine nuts, raisins, cinnamon, allspice, salt, and black pepper. Cook for an additional 2 minutes, allowing the flavors to meld together.
  6. Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the vegetable mixture. Stir well to combine all ingredients.
  7. Remove from heat and garnish with fresh parsley before serving.
