Ingredients

  • Potatoes - 500 grams, thinly sliced
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Tomato - 1 large, diced
  • Olive oil - 3 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Vegetable broth - 200 ml

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a large mixing bowl, combine the sliced potatoes, chopped onion, minced garlic, diced tomato, olive oil, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well until the potatoes are evenly coated with the spices.
  3. Layer half of the potato mixture in a baking dish, then sprinkle half of the chopped parsley over it.
  4. Add the remaining potato mixture on top and pour the vegetable broth evenly over the layers.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  6. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and lightly golden on top.
  7. Remove from the oven, let it cool for a few minutes, and garnish with the remaining parsley before serving.
