Lebanese Pancakes

Ingredients
- All-purpose flour - 150 grams
- Water - 300 milliliters
- Yeast - 7 grams
- Sugar - 15 grams
- Salt - 1/2 teaspoon
- Baking powder - 1/2 teaspoon
- Vegetable oil - for cooking
- Unsalted pistachios, crushed - 50 grams
- Ricotta cheese - 100 grams
- Honey - for drizzling
Steps
- In a bowl, mix the all-purpose flour, sugar, salt, yeast, and baking powder.
- Gradually add water while whisking until you achieve a smooth batter. Let it rest for 15 minutes.
- Heat a non-stick skillet over medium heat and lightly grease with vegetable oil.
- Pour small ladles of the batter onto the skillet to form pancakes (about 10 cm in diameter). Cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook for an additional 1-2 minutes until lightly golden. Remove from skillet and cover with a kitchen towel to keep warm.
- In a bowl, combine the ricotta cheese and crushed pistachios. Mix well.
- Take a pancake, place a spoonful of the ricotta mixture in the center, fold it over, and pinch to seal.
- Serve the filled pancakes drizzled with honey.
