Ingredients

  • All-purpose flour - 150 grams
  • Water - 300 milliliters
  • Yeast - 7 grams
  • Sugar - 15 grams
  • Salt - 1/2 teaspoon
  • Baking powder - 1/2 teaspoon
  • Vegetable oil - for cooking
  • Unsalted pistachios, crushed - 50 grams
  • Ricotta cheese - 100 grams
  • Honey - for drizzling

Steps

  1. In a bowl, mix the all-purpose flour, sugar, salt, yeast, and baking powder.
  2. Gradually add water while whisking until you achieve a smooth batter. Let it rest for 15 minutes.
  3. Heat a non-stick skillet over medium heat and lightly grease with vegetable oil.
  4. Pour small ladles of the batter onto the skillet to form pancakes (about 10 cm in diameter). Cook until bubbles form on the surface, about 2-3 minutes.
  5. Flip the pancakes and cook for an additional 1-2 minutes until lightly golden. Remove from skillet and cover with a kitchen towel to keep warm.
  6. In a bowl, combine the ricotta cheese and crushed pistachios. Mix well.
  7. Take a pancake, place a spoonful of the ricotta mixture in the center, fold it over, and pinch to seal.
  8. Serve the filled pancakes drizzled with honey.
