  • Bell pepper - 1 small, diced
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. In a mixing bowl, whisk together the eggs, salt, and black pepper until well combined.
  2. In a non-stick skillet, heat the olive oil over medium heat.
  3. Add the chopped onion and bell pepper to the skillet and sauté for about 3-4 minutes until softened.
  4. Stir in the diced tomato, chopped parsley, and mint, cooking for an additional 2 minutes until the vegetables are tender.
  5. Pour the egg mixture over the sautéed vegetables, tilting the pan to ensure even distribution.
  6. Cook for 4-5 minutes or until the edges begin to set, gently lifting the edges with a spatula to allow uncooked eggs to flow underneath.
  7. If using, sprinkle the crumbled feta cheese on top and cover the skillet with a lid.
  8. Cook for another 2-3 minutes until the eggs are fully set and the cheese has softened.
