- Green or brown lentils - 100 grams
- Water - 750 milliliters
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Tomato - 1 medium, diced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Vegetable broth - 250 milliliters
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, juiced
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and diced celery. Sauté for another 5 minutes until the vegetables are slightly softened.
- Stir in the diced tomato, cumin, coriander, and turmeric, cooking for an additional 2 minutes until fragrant.
- Add the rinsed lentils, water, and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the lentils are tender.
- Season with salt, black pepper, and lemon juice to taste.
- Serve hot, garnished with fresh parsley.
