Ingredients

  • Green or brown lentils - 100 grams
  • Water - 750 milliliters
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato - 1 medium, diced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Vegetable broth - 250 milliliters
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and diced celery. Sauté for another 5 minutes until the vegetables are slightly softened.
  4. Stir in the diced tomato, cumin, coriander, and turmeric, cooking for an additional 2 minutes until fragrant.
  5. Add the rinsed lentils, water, and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the lentils are tender.
  6. Season with salt, black pepper, and lemon juice to taste.
  7. Serve hot, garnished with fresh parsley.
